There is something special about sparkling wines, so it’s no wonder they are synonymous with celebrations. From quiet nights in to a packed wedding, sparkling wines are just right for the occasion, but you don’t have to wait for the next graduation to enjoy a glass…join our sparkling wine tasting in Denver, it’s coming right up!

Champagne is the most widely known sparkling wine, and is often used as a generic terms for any wine with bubbles, but as you may now, true Champagne comes from the Champagne region of France, where strict production methods create the complex flavors and fine bubbles that define this vintage.

You might already be familiar with Moët & Chandon, Veuve Clicquot or Dom Perignon, but there are so many more to enjoy. Our goal is to let you taste some vintages that are a little off the beaten path. When you taste Champagne, pay attention to the mousse (the quality of the bubbles). Fine, persistent bubbles indicate proper production methods and aging. The flavors should balance acidity with complexity, often featuring notes of brioche, citrus, and sometimes fruity or nutty flavors depending on the blend and aging process.

Cava is Spain’s sparkling wine gem, offering an excellent introduction to quality sparkling wine without Champagne's premium price point. These Spanish wines are produced primarily in Catalonia, using a traditional method similar to Champagne but with different grape varieties and terroir influences.

The three main grape varieties in Cava are Macabeo, Parellada, and Xarel-lo. As you might expect, they create a different flavor profile than champagne. Expect brighter acidity, citrus notes and sometimes a slight almond finish that makes Cava particularly food-friendly.

If you start loving Cava wines like we do, keep an eye out for Gran Reserva Cava wines which are aged for at least 30 months. This process helps them develop more complex flavors and many consider them comparable to Champagne wines.

Pet Nat, short for Pétillant Naturel, represents the most ancient method of making sparkling wine and has found enthusiastic supporters in the wine community. This style completes fermentation in the bottle, creating a slightly cloudy, often funky, and always interesting sparkling wine experience. To give you a beer comparison, think how different Belgian beers are from the rest of the region’s flavors.

These wines often feature unusual grape varieties and can range from barely fizzy to quite sparkling. The flavors tend toward the rustic and earthy, sometimes with barnyard or bread dough notes that polarize drinkers; you'll either love the complexity or find it odd.
